Cucumber Pineapple Smoothie
Pineapple and cucumber blended together…
Just 2 ingredients and you’re on your way to a tasty and healthy juice recipe!
You can adjust the consistency (thickness) as well as add more flavors to your beverage by playing around with different ingredients.
If you want more liquid, incorporate coconut water into the mix. Or, for creaminess, blend the drink with coconut yogurt.
When you add fresh ginger, celery, mint leaves, lemon, or chia seeds to your pineapple and cucumber juice, you get more nutrients into your body!
What you’ll need
A knife
A chopping board
A blender or juicer
cheesecloth (see notes)
Ingredients
1 fresh pineapple, medium-sized
(or some canned pineapple, about 2.5 cups, 20 oz can)
1 cucumber, large or 6 minis
ice cubes, optional
The process…
Cut off the top and bottom of the pineapple, then slice off the outer peel and trim each eye. Slice the pineapple flesh into rings. Optionally, you can core the pineapple slices and cut them into smaller chunks
Slice the cucumber into smaller pieces.
Place the pineapple chunks and cucumber slices into a blender/juicer.
Blend/juice until smooth.
Taste the juice, and add more pineapple or cucumber as needed.
Pour the pineapple and cucumber juice into a glass with ice cubes.
Garnish with a slice of cucumber.
notes:
if you prefer a juice without pulp, strain the mixture through a cheesecloth.
use mini or English cucumbers…they are mildly sweet with small seeds, and their thin skin means you won’t need to peel them.
for leftovers or make-ahead, transfer the juice to a covered container and store it in the fridge for 3-4 days.
you can also freeze the juice as flavored ice cubes and use them for smoothies.
